In the spirit of Italian hospitality and warmth, OPUS Vancouver welcomes a new Head Chef to the Capo & The Spritz re-opening team, along with a fresh ‘aperitivo hour’ menu and a vibrant streetside patio for al fresco dining...just in time for summer in the heart of the city!
Inspired by a culture renowned for its passion, Chef Evan Morgan takes over in the kitchen at Capo with signature passione Italiana. An obsessive traveler and lover of downhill skiing and mountain biking, the Victoria-born adventurer admits to an affinity for simple food, elegant in presentation and globally inspired in flavour. Having twice circled the globe, with stages and stopovers abroad, and more permanent positions in some legendary local spots (Blue Water Café, YEW seafood + bar and The Empress in Victoria, Mission Hill in the Okanagan, Araxi in Whistler), Chef Evan has been collecting stories and inspiration from each locale along the way, bringing this lust for life to Yaletown where he is “excited to learn about new products, ingredients and techniques”, on his current culinary journey.
“Returning to the thriving restaurant scene in Yaletown is a welcome change of scenery for me, and I am excited to create delicious food in a neighbourhood truly second to none. When I hear the dining room bubbling with laughter, and see the smiles of familiar faces I have been cooking for throughout my career, I am filled with a sense of purpose and joy. There is nothing like it”, says Chef Morgan.
At a time when folks are starved for connection and community, Capo at OPUS Vancouver not only represents the Italians’ passion for food and wine but also subscribes to an unspoken nostalgia for simpler times – sipping on a Spritz, picking up a pizza, catching a game while catching up with neighbours. For guests wanting to get better acquainted with the Capo brand of hospitality, the restaurant, cocktail bar, and new street side patio, reminiscent of the ubiquitous bustling sidewalk seating in Italian cities and villages, are once again open every day at 3pm with a daily Happy Hour from 3 to 530pm.
